Malawax (Somali Pancakes)

These pancakes are great for breakfast or as a snack anytime during the day! With a bit of creativity, it can also easily be turned into a mouthwatering dessert!

Ingredients

  • 1 cup plain flour
  • 1 1/4 cup milk
  • 1 egg
  • 1 tsp vanilla extract
  • pinch salt
  • 2 tbsp sugar optional

Instructions

  1. Add all ingredients in a bowl and whisk together until a smooth batter forms.
  2. Place a non-stick frying pan on medium heat.
  3. When the pan heats up, brush lightly some oil over the pan.
  4. Pour 1/4 cup of the batter in the center of the pan and spread the batter by moving the pan in circular motion till it covers all edges.
  5. Cook the malawax for two minutes.
  6. Brush the top lightly with some oil again and flip the pancake.
  7. Cook for another minute and then remove from the pan and place it on a plate.
  8. Cover to keep warm and continue with the rest of the batter until finished.

Recipe Notes

[recipe] You can add sugar into the recipe, or omit this and add it later. Traditionally, malawax is eaten by drizzling some melted butter or oil with sugar or honey on top. Alternatively, you can easily spread some nutella on top as well. Personally, we like to add the sugar in the recipe, and sometimes just drizzle some honey on top for extra sweetness.
